Serves 12 people
Ingredients:
- 1/2 Cup butter diced
- 4 Cups self rising flour
- 4 Tbsp superfine sugar
- 2 Eggs, beaten
- 2/3 Cup milk
Filling and Decoration
- 2 Tbsp butter, melted
- 2/3 Cup dried apricots, chopped
- 3 1/2 Ounces dark chocolate chips
- 1-2 Tbsp milk to glaze
- 1 Ounce dark chocolate , melted
1) Grease a 10-inch round cake pan and line the base with baking parchment.
2) Rub the butter into the flour until the mixture resembles fine breadcrumbs. Stir in the superfine sugar, eggs and milk to form a soft dough.
3) Roll out the dough on a lightly floured surface to form a 14-inch square
4) Brush the melted butter over the surface of the dough. Mix together the apricots and the chocolate chips and spread them over the dough within one inch of the top and bottom.
5) Roll up the dough tightly, like a jelly roll, and cut it into 1-inch slices. Stand the slices in a ring around the edge of the prepared pan at a slight tilt. Brush with a little milk.
6) Bake in a preheated oven at 350F for 30 minutes, or until cooked and golden. Cool the cake in the pan for about 15 minutes, then carefully transfer it to a wire rack to cool.
7) Drizzle the melted chocolate over the ring to decorate.
The cake is best served very fresh, ideally the day it is made. It is fabulous served slightly warm.
