Mango Salsa
1 Fresh mango, diced
1/4 Cup red onion, chopped
2 Tablespoon fresh cilantro, chopped
Juice of one lime
2 Tablespoon olive oil
1 Teaspoon salt
Fresh ground black pepper to taste
Optional: 1 small Thai chili pepper or 1/2 jalapeno pepper, seeded and finely chopped
In a bowl, combine all of the above ingredients. If the mango is firm, mash the chopped pieces a bit with a fork.
