    Spiral Rolled Filet with Pesto

    Celebrity chef Michael Chiarello has created this delicious filet recipe which can be easily made any time of the year with a griddle or grill pan from NapaStyle!
    Spiral Rolled Filet with Pesto

    Servings: 4

    Ingredients

    2 Pounds Center Cut Filet of Beef, Spiral Cut*
    Gray Salt
    Freshly Ground Pepper
    1/2 cup Basil Pesto
    Extra Virgin Olive Oil
    8 Long Wooden Skewers


    *Chef's note: Ask your butcher to "spiral cut" or "jelly-roll cut" the filet for you to create a flat, rectangular piece of meat.

    Directions

    1. With the heel of your hand pound the meat and flatten to a thickness of 1/2 inch.
    2. Sprinkle the meat with gray salt and pepper.
    3. Spread the pesto over the meat, leaving a 1 inch border on one long side.
    4. Roll the meat towards the border.
    5. Cut the roll in half. Then cut each half into 4 slices.
    6. Lay 2 slices of meat side by side.
    7. Run a skewer through one side of both pieces. Run a second skewer through the opposite side of the pieces. Repeat with remaining meat.
    8. Drizzle with the oil.
    9. Preheat grill or grill pan.
    10. Grill over high heat for about 3-4 minutes per side. Let rest for a few minutes before serving.
